Butternut Squash & Kale Gratin

Serves 4


Ingredients:

Butter, 2 tbsp

Butternut squash, 2 cups, sliced

Spring Onion, 1 sliced

Kale, 2 cups, chopped

Salt & Pepper to taste

Nutmeg, dash

Cream, 1/2 cup

Panko, 2 tbs

Parmesan Cheese, 2 tbsp


Directions:

Preheat oven to 475 degrees on convection.


Brown butter in a medium heat sauté pan. Add butternut squash and cook until browned and soft, 7-10 minutes. Add the kale and onion and cook until wilted. Season with salt, pepper and nutmeg, stir. Add the cream and cook until thick, about 5 minutes.


Pour into a casserole dish and top with the panko and parmesan cheese. Bake for 7 minutes, then place under broiler for 2 -3 minutes if not browned to your liking.
