Ingredients
Fennel, 1 bulb, thinly sliced
Olive oil, 1 tbsp
Thyme, 4 sprigs, leaves removed
Salt & Pepper, to taste
Butter, 2 tbsp
Sandwich Bread, 8 slices
Gruyere Cheese, 4 oz, grated
Apple, 1, thinly sliced
Directions
Add fennel and oil to pan. Cook over medium low heat, stir frequently. Add salt and thyme once lightly browned. Continue to cook until they are caramelized and soft, takes about 15 minutes total.
Wipe out your pan and add butter over medium heat. Once butter is melted add the bread then place fennel over 1 slice of bread per sandwich. Then cheese on both sides and apples on the side opposite the fennel. Once the bread is toasty and browned, bring it together, cook for another minute or two until everything melts together. Place it on a cutting board or plate, cut in half and enjoy.
