Serves 4
Ingredients:
For the Fritters
¾ cup flour
1 tsp baking powder
½ tsp salt
¼ tsp smoked paprika
1 large egg
½ cup milk
3 tbsp minced chives
3 cups fresh cut corn
For the Sauce
½ cup sour cream
2 tbsp lemon juice
1 tbsp minced chives
Salt & Pepper to taste
Directions:
Mix the flour, baking powder salt and smoked paprika. Add the egg and milk and mix well, then add the chives and corn, mix well again. Heat 4 tbsp oil in a large sauté pan over medium high heat. Place ¼ cup of corn mixture to form patties in the pan, let brown and flip. These take about 2 minutes per side. Salt after placing them on a paper towel lined plate.
While the fritters are cooking mix the sour cream, lemon juice, chives, salt and pepper. Serve a dollop alongside the fritters or on top.
