Serves 6-8
Ingredients:
Fresh Cranberries, 12oz
Raspberries, 2 pints
Sugar, 1/2 cups
Water, 1 cup
Oranges, 2, juice and zest separated
Directions:
Add cranberries, raspberries, sugar, water and orange juice to a saucepan. Bring to a boil and reduce to a strong simmer. Simmer for 20 minutes.
If you like your cranberry sauce chunky add the orange zest and set aside until room temperature.
If you like your sauce smooth then place a strainer over a bowl and place the cranberry sauce in it. Using a rubber spatula pass the sauce through the strainer. Really press it and scrape the bottom of the strainer just when you think you are done. Now add the orange zest. Set aside until room temperature.
You can serve it chilled after placing in the refrigerator or serve room temperature.
