Grilled Vegetable Panzanella

Serves 4


Ingredients:

Oil, 2 tbsp grape seed

Spring Onions, 2 sliced

Mini Tomatoes, 1 cup

Bell Peppers, 2 large or 8 baby, diced

Focaccia, 1 diced & toasted



For the Vinaigrette

Vinegar of choice, 1/2 cup

Parmesan Cheese, 2 tbsp, grated

Dijon Mustard, 1 tbsp

Olive Oil, 1/2 cup

Salt & Pepper to taste


Directions:

Heat a grill with the oil over medium high heat. Add the onions, tomatoes & peppers. You are looking for a char on both sides.


In the meantime, add the vinegar, cheese and mustard to a small bowl, whisk together and slowly drizzle in the oil. Season to taste.


In a bowl add the focaccia & roasted vegetables. Toss with dressing, you want the bread to soak up a lot of it. Divide between plates.
