Serves 8 - 10 as Appetizer
Ingredients:
1 baguette, sliced
Olive oil as needed
1 ½ cups fresh ricotta cheese
2 tbs basil, sliced thin
2 tsp lemon juice
Salt to taste
2 peaches, sliced
Honey, 2 tsp
Toasted pistachios, 2 tbsp
Directions:
Drizzle your baguette with olive oil on both sides and toast on medium in your toaster oven.
Mix ricotta with the basil, lemon juice and salt.
Once baguette is toasted spread some cheese mixture on top. Add a peach slice or two then drizzle with honey and sprinkle with pistachios.
