Poached Salmon with Herb & Yogurt Dressing

Serves 4


Ingredients:

2qts water

1 pinch Saffron

2 Limes

4 lg stems of basil, leaves & stems separated

2 tbsp parsley, leaves & stems separated

6 peppercorns

Salt & Pepper to taste

2 lbs Salmon Fillets, cut into individual pieces & skinned

½ cup yogurt

1 tbsp olive oil


Directions:

Add water, saffron, juice & rind of 1 lime, basil & parsley stems and peppercorns and pinch of salt into a saucepan. Bring to aboil then reduce heat to 140 – 160 degrees. After a few minutes, lower in the salmon to poach.


In the meantime, add the juice of 1 lime, basil & parsley leaves, salt, pepper, yogurt and olive oil to a food processor, blend, taste and season if necessary.


After about 5 minutes remove the salmon, dry off on a paper towel. When ready to eat drizzle with the yogurt dressing.
