Soba Noodles with Crispy Oyster Mushrooms & Sesame Soy Dressing

Serves 2


Ingredients:

3oz cooked soba noodles

1/4 lb oyster mushrooms, chopped

Oil for frying

1/2 cucumber diced

3 green onions minced


1/4 cup tahini

1 tbsp rice vinegar

2 tbsp soy sauce

2 tsp sesame oil


2-3 tsp toasted sesame seeds


Directions:


In a sauté pan heat oil over medium high heat until hot, add the mushrooms in an even layer, leave alone until they are browned, about 4-5 minutes then flip.


In the meantime, mix the tahini, vinegar, soy sauce & sesame oil in a bowl. Taste & set aside.


Once the mushrooms have browned all over place them in a bowl and add the soba noodles, cucumber & green onions. Toss with some of the dressing and top with toasted sesame seeds. Divide between plates.
