Squash Blossom Pizza with Ricotta & Sundried Tomatoes

Serves 2


Ingredients:

Pizza dough

1 heaping tbsp sundried tomatoes in oil

1 cup fresh ricotta

Salt to taste

1 tbsp pizza seasoning

5 or 6 squash blossoms

Oil for drizzling


Directions:

Preheat oven to the highest temperature.

Press out the pizza dough to a 7-8inch circle

Mix sundried tomatoes with ricotta and salt and almost all of the seasoning.

Spread cheese mixture over the dough. Fan squash blossoms out over the cheese. Sprinkle with remaining pizza seasoning and drizzle with oil.


Bake on pan for 8-12 minutes depending on oven (or follow manufacturer's instructions if you have one of those cool outdoor ovens).

Pull when brown and bubbly.
